Golden crispy roast potatoes with fluffy centres, cooked in hot oil or duck fat.

Crispy Roast Potatoes

Ingredients

  • 800g potatoes (Maris Piper or King Edward work well)
  • 2–3 tbsp oil or duck fat
  • 1 tsp salt
  • Black pepper
  • Optional: rosemary or garlic

Instructions

  1. Preheat oven to 200°C (180°C fan).
  2. Peel and cut potatoes into large chunks.
  3. Boil in salted water for 8–10 minutes until just starting to soften.
  4. Drain and shake the potatoes in the pan to rough up the edges.
  5. Heat oil or duck fat in a roasting tray in the oven for 5 minutes.
  6. Carefully add the potatoes to the hot oil.
  7. Turn to coat and season with salt and pepper.
  8. Roast for 40–50 minutes, turning halfway through, until crispy and golden.

Notes

  • Rough edges create extra crispiness.
  • Duck fat adds incredible flavour.
  • Add garlic or rosemary in the final 20 minutes of cooking.
